French Onion Soup

A basic French onion soup recipe. Goes well with a slice of toast and grated cheese on top.

Method

Fry the onions in the oil and butter until softened.

Add the sugar and garlic and continue cooking until the onions caramelise - about 20 minutes.

Stir in the flour and then slowly add the wine followed by the yeast extract and stock.

Cover and simmer for 20 minutes.
