A cool tomato-based soup
- 1/2 cucumber
- 1/2 red pepper
- 2 spring onions
- 2 cloves garlic
- 2 slices of bread
- 5 tomatoes
- 1 tbsp extra virgin olive oil
- 1.5 tbsp red wine vinegar
- 1 tbsp harissa paste
- Salt and pepper to taste
- Mint and coriander leaves to serve
Boil a pan of water and add the tomatoes, whole, for about 40 seconds so they become easy to peel.
Remove the tomatoes from the water and let them cool before removing the skins.
Blend all ingredients together and chill.
Top with the chopped mint and coriander.
