Just a whole bunch of vegetables thrown together in a delicious manner.

Ingredients

Method

Cut the tomatoes into quarters,

aubergines and courgettes into circles,

slice the peppers,

cut the onions to circles.

Heat 2tbsp oil in a pan and put the onions and peppers in

When they're tender add the tomatoes, chopped garlic, time and bay

add salt pepper and let simmer for 45 minutes

in the meantime, prepare the aubergines and courgettes:

cook them (individually or together) in olive oil for 15 minutes

when the vegetables are soft add them to the tomato mix.

continue to simmer on a low heat for 10 minutes.

season and serve
